It’s the perfect summer selection:
🍾 Tonic of Wildness 2021 – Naturellement pétillant, disgorged after four years on the lees and given additional bottle ageing for extra complexity.
🌸 Ousia 2023 – our beautiful summer “rosé” (although not technically a rosé!), made from Chardonnay (partially macerated) and Gamay, with Chardonnay taking the lead.
🍷 Joujou 2024 – all-time favourite. Serve it lightly chilled and it’s an absolute summer banger.
