Born after we’ve lost a part of the Sauvage we came up with a totally new and creative idea Luckely we had good connections in Alsace where we were able to buy Sylvaner, Riesling and a tiny bit of Pinot gris grapes (biodynamically grown in Alsace and planted on schist). We wanted to do something different with it. So we decided to do a direct press, age the wine in fiber and after age the wine even more on the lees of Joujou (Gamay) in used barrels for another 6 months. The Gamay lees have brought the wine more depth and a velvety taste, color wise it’s peachy (but technically a white wine). Just a little different, like us 🌝 .
