3 very different styles made with white grape varieties

In 2020 we did a test with a 2 year maceration of chardonnay to see the flow of the wine with quit long maceration. This is something we do by feeling, curiosity and testing to see what will be the right amount of time. That’s why we decided the last 2 years to have a bit longer maceration for Aptemiz. For 2023 it turned out the magical 10 months. The grapes where destemmed by hand on a wooden board and after vinified and aged on amphora.

2x Poelignié- Monthieux 2023 / 13% / VDF
Because of personal cravings for a great voluptuous and creamy burgundy white we decided it’s time for us the make it our self. No Burgundy Chardonnay, but Beaujolais grapes. We joke with the name and called it Poelignié-Monthieux, a wink to our Burgundy neighbors. Direct press and aged for more than 11 months on a Burgundy barrel from 2017.

2x Babatise 2023/ 13.1 % / VDF
Born after we’ve lost a part of the Sauvage we came up with a totally new and creative idea Luckely we had good connections in Alsace where we were able to buy Sylvaner, Riesling and a tiny bit of Gewurztraminer grapes (biodynamically grown in Alsace and planted on schist). We wanted to do something different with it. So we decided to do a direct press, age the wine in fiber and after age the wine even more on the lees of Mayga (Gamay) in used barrels for another 3 months. The Gamay lees have brought the wine more depth and a velvety taste, color wise it’s peachy (but technically a white wine). Just a little different, like us 🌝 .
